Moon cake is the traditional product in China and is also popular in Southeast Asia country and all worlds’ Chinese area. The moon cake can be made in a wide variety of shapes and tastes.
After molding line, the moon cakes are put into U shape baking pan and are transported into first part of tunnel oven, after brushing liquid egg yolk, the moon cake are baked again. After baking, the moon cakes are cooled in step-cooler, after cooled. They are taken out from pan by using the vibration type de-panner before enter into packing machines. The empty pans return through the pan cooling tunnel to the dough positioning and panning machine. And enter into next cycle.
Baking effect is the key to producing the perfect product. Saimai’s tunnel oven has independent temperature control in each zone to ensure that the product coming out of the oven has a uniform texture and color.The working parameters can be adjusted while machines are running, to further reduce stoppages. When running at steady state our ovens require no operator presence, and the efficient insulation system saves energy.
